WHICH HAM?

  • Dinner ham. A compressed version of ham, similar to deli meat. Flavours are subtle and don't penetrate sauces as well as a bone in.
  • Spiral-cut hams. Spiral-cut hams save slicing time. best eaten cold. Heating pre-sliced ham causes dry out.
  • Bone-in. Bone-in hams are flavorful and tender than their bone-free or spiral-cut. best for roasting

HOW MUCH HAM DO YOU NEED?

Keep in mind it’s nice to have some ham to send home with guests, as well has having enough for leftovers for yourself for a couple of days. Estimate about 3/4 of a pound per person. With that as a guide, a 15-pound bone-in ham will provide a meal for 10 guests, with enough remaining for leftovers.

HOW TO SCORE A HAM

To penetrate the flavour into the meat, score the ham and pour fat juices all over. Slit through the skin of the ham about a quarter-inch-deep, Make each row about an inch apart; then repeat the pattern across. You should see diamond shapes across.

HOW TO KEEP LEFTOVERS

Once the happy bellies have been satisfied and before the wine bottles start to flood the kitchen counter, make sure to set aside the sliced ham in the fridge. You can store this for 3-5 days or freeze for about 1-2 months. Pour the juices from the roasting pan before freezing. This keeps the ham meat moist and flavourful.Ha
